Sound of the Sea
OK, I admit using dry ice and the sound of the sea (idea stolen from the Fat Duck) is just theatre, but there is evidence that sound and visual cues enhance ones dining experience! Carbon dioxide, (CO2) is a liquid under pressure, but release it from its pressurized tank, and it forms ice. As it melts, it turns to CO2 gas rather than water like regular ice would, hence it is "dry". Rather than buy it, I decided to create my own from a tank of CO2 I recently acquired. But more on that in another post! Here I have served oysters complemented of course by a lovely B.C. sparkling. The dry ice fog was meant to evoke the mist of the sea.
